Here are three "Impossibly Easy" recipes courtesy of the Betty Crocker Site () on the internet using Bisquick mix:

Easy Swiss & Ham Pie:

1 1/2 cups cubed cooked smoked ham
1 cup shredded Swiss cheese
1/4 cup chopped green onions (or onion)          
1/2 cup Bisquick mix
1 cup milk
1/4 tsp salt (if desired)
1/8 tsp pepper
2 eggs
1 tomato (sliced)
1 green pepper, cut into strips

Heat oven to 400 degrees. Grease a 9” pie plate. Sprinkle ham, cheese and onions in the pie plate. Stir Bisquick mix, milk, salt, pepper and eggs until blended. Pout into pie plate. Bake 35 to 40 minutes or until knife inserted comes out clean. Garnish with tomato and bell pepper.

 

Easy Chicken & Broccoli Pie:

2 cups frozen broccoli cuts (thawed & drained)
1 1/2 cups shredded Cheddar cheese
1 cut-up cooked chicken or 2 cans chunks chicken, well drained
1 medium onion, chopped
1/2 cup Bisquick mix
1 cup milk
1/2 tsp salt
1/4 tsp pepper
2 eggs

Heat oven to 400 degrees. Spray 9” glass pie plate with cooking spray. Sprinkle broccoli, 1 cup cheese, the chicken and onion in pie plate. In medium bowl, stir remaining ingredients with wire whisk or fork until blended. Pour into pie plate. Bake 35 minutes or until knife inserted comes out clean. Sprinkle with remaining cheese. Bake 1 to 2 minutes longer until cheese is melted. Let stand 5 minutes before serving.

Easy Vegetable Pie:

2 cups chopped caulifowerets (or broccoli)
1/3 cup chopped onion
1/3 cup chopped green bell pepper
1 cup shredded Cheddar cheese
1/2 cup Bisquick mix
1 cup milk
1/2 tsp salt
Pinch of pepper
2 eggs

Heat oven to 400 degrees. Grease a 9” pie plate. Heat 1 inch salted water to boiling in a medium saucepan. Add flowerets or broccoli (or both?). Cover and heat to boiling. Cook them about 5 minutes or until almost tender: drain thoroughly. Stir remaining ingredients together until blended and pour into pie plate. Bake 35 to 45 minutes or until golden brown and knife inserted comes out clean. Cool 5 minutes.
