This is really a misnomer because I don't really enjoy cooking unless it is very simple. I have an extensive collection of cookbooks, of all descriptions, some of them are Holly Rowland’s excellent ones that I bought at her yearly sale and I enjoy them thoroughly...to read that is! How many of us have spent a pleasant couple of hours perusing good recipe books and then lacking energy and ingredients end up cooking a perennial and easy favourite.

I'd like to start by sharing some very easy and innovative recipes that take us back to the basics where ingredients are nearly always to hand, like Easy Meat Pie, Sausage Delight and Easy Shepherds Pie. So here goes:

Easy Meat Pie
1. A can of Cream of Potato Soup
2. Pie dough (your own, frozen or prepackaged)

  3. 1 lb of ground beef
4. 1 onion, diced

Line a pie plate with the dough leaving enough for a top.

Mix the ground beef with the undiluted soup and diced onion, add some salt and pepper and dump into the pie shell.

Cover with the remaining dough and bake at 350° for approximately 45 minutes. The aroma will have your mouth watering and will tell you when it's ready. It's especially nice hot or cold with a salad.

This would serve four people, or, if cooking for one...freeze the rest for another time.


Sausage Delight
1. 1 lb beef or pork sausages
2. 2 large potatoes

  3. 1 large onion (or 2 small)

Cut the sausages into pieces and using a large frying pan brown them throughly.

Peel and quarter the potatoes and onions then add to the pan.

Make up some gravy powder, pour over, and cook with the lid on. Delicious!

Again would serve three to four people.

Easy Shepard's Pie
1. 1 lb extra-lean ground beef
2. Potatoes (cooked and mashed)
3. 1 small can niblets corn

  4. 1 can Cream of Mushroom soup
5. 1 onion, diced

Brown and cook the meat, add the soup, onion, and corn. Put it all in a casserole dish and top with the hot mashed potatoes. Good family meal.

Comfort food like this is always welcome, easy to prepare, nourishing and obviously can be extended depending on the size of your family. I'll be very happy to share hints and other recipes in future issues

Again would serve three to four people.
