1 medium carrot
1 medium yam
1 leek
Vegetable broth
Chopped garlic

Wash leek thoroughly and cut up white part only. Cube the carrot and yam. Place in two cups of vegetable broth, add black pepper, 1/4 tsp chopped garlic (buy it in a jar and keep refrigerated), add a pinch of ginger (optional but it gives it a bit of a kick). Boil until carrot & yam soften, mash with potato masher (not in a blender as it gets too runny). If too thick add a little water. Enjoy with crackers or French bread. Note: One small onion can replace the leek.
