Here are 3 Irish potato side dishes for

COLCANNON:
Potato & Cabbage or Kale dish
1 lb cabbage (or kale)
1 lb potatoes
2 leeks
1 cup milk
¼ tsp ground mace
½ cup butter
salt & pepper to taste.
In a large pot, boil cabbage until soft. Remove
and chop fine. Set aside. Boil potatoes until soft.
Remove from heat and drain. Chop leeks, green and
white parts, and simmer them in just enough milk to
cover, until they are also soft.
Season and mash potatoes, stir in cooked leeks
and milk. Blend in the cabbage or kale until the
whole is a pale green fluff. Make a well in the centre
and pour in the melted butter. Mix well.
IRISH BOXTY:
(Potato pancakes)
1½ cups grated raw potato
1 cup all-purpose flour
1 cup left-over mashed potato

1 egg
1 tbsp skim milk
¼ cup olive oil
salt & pepper to taste.
Toss grated potatoes with flour in a large bowl.
Whisk together egg and skim milk and mix into
all the potatoes.. Season with salt and pepper. Heat
olive oil in large skillet over medium to high heat.
Drop in the potato mixture forming patties about 2”
in diameter. Fry on both sides until golden brown, 3
to 4 minutes each side.
POTATO CASSEROLE:
2 cups peeled and shredded potatoes
½ cup melted butter
2 eggs, beaten
1 tsp minced onion
1 tsp salt
1 tsp paprika
½ cup milk
½ cup sharp cheddar cheese
Preheat oven to 350 degrees. Butter a 1.5 quart
baking dish.
In a medium bowl combine potatoes, butter,
eggs, onion, salt,, and paprika. Mix well. Place
potato mixture in the baking dish and pour milk over
the top. Bake in the prepared oven for 40 minutes.
Sprinkle with cheese, return to oven and bake until
cheese melts and is a nice golden brown.
