Conni's Cooking Corner

Some cookies and bars to sweeten up this bleak month, courtesy of: “Our Family Cookbook: Vol 111.”

FRUIT WALNUT BARS:

2 eggs                                                  1 ½ cups white sugar   

1 can Fruit Cocktail, drained                1 ¼ cups flour

1 ½ tsps Baking Soda                           ½ tsp salt

1 tsp Vanilla                                         1 tsp cinnamon

1 1/3 cup Coconut                                 ½ cup chopped Walnuts 

Preheat oven to 350 degrees. Grease and flour two 9” square pans. Beat eggs and sugar until light and fluffy. Add fruit cocktail, flour, baking soda, salt vanilla and cinnamon. Bake at 350 degrees for 25 to 30 minutes. While hot, drizzle with glaze. Cool and cut into bars. 

GLAZE:

¾ cup white sugar                                ½ cup butter

¼ cup evaporated milk                         ½ tsp vanilla

½ cup chopped walnuts

Combine all ingredients except the walnuts. Cool while bars are baking. Drizzle on top of hot bars.

 

PEANUT-BUTTER COOKIES:

½ cup Shortening                                 1 Egg

½ cup Peanut Butter                             1 tsp Vanilla

½ cup Brown Sugar                             1 ½ cup Flour

½ cup white Sugar                               1 tsp Baking Soda

¼ tsp Salt

Cream shortening and peanut butter together. Add both sugars and beat. Add Egg and beat. Add Vanilla and dry ingredients. Blend. Drop from a spoon onto cookie sheets and press down with fork. Bake for 10 minutes in 350 degree oven.

 

NANAIMO BARS:

½ cup Butter                                        2 cups Graham Crumbs

5 tsps Cocoa                                         1 cup Coconut

1 Egg                                                   ½ cup Walnuts

¼ cup Sugar                                         1 tsp Vanilla

Mix Butter, Cocoa, Egg, Sugar until custardy. Mix in Graham Crumbs, Coconut, Walnuts, Vanilla. Press into 9” square pan. 

Combine together:

¼ cup Butter                                        2 tsps Custard Powder

3 tsps Milk                                           2 cups Icing Sugar

Spread above ingredients over the first mixture and let harden.

Melt 4 squares semi-sweet chocolate with 1 tsp Butter. Spread on top and let cool.
