Some lovely squares to serve at your Easter Tea Party. Taken from Jean Pare’s “Company’s Coming: Delicious Squares”

 

CHOCOLATE CRISPS:

¾ cup honey

1 cup peanut butter

1 cup semi-sweet chocolate chips

1 cup salted peanuts

3 cups rice cereal.

Melt the honey and peanut butter in a large saucepan over low heat. Bring slowly to the boil. Remove from heat. Add chips and stir until they melt. Add peanuts and rice cereal and stir to coat.

Press in a 9 x 9 inch pan. Chill well before cutting into 25 squares.

 

BANANA OAT SQUARES:

8 tbsp butter or margarine

½ cup brown sugar

1 egg   

¼ tsp salt

3 small bananas (mashed)

2 cups quick cooking rolled oats

1/3 cup chopped walnuts

Cream butter and sugar. Add egg and beat well. Add salt and mashed bananas. Beat then add oats and nuts. Stir. Spread in greased 8 x8 inch pan and bake in 350 degree oven for almost 1 hour. Cool and cut into squares. Makes 25.

 

CHEESE APPLE SQUARES:

1 cup grated Medium Cheddar cheese

½ cup butter or margarine

1 ½ cups all-purpose flour

1 tsp baking powder

1 cup sugar

1 cup apple pie filling

Crumble cheese and butter together well. Add flour, baking powder and sugar. Continue to crumble well then spread half of mixture in ungreased 8 x8 inch pan. Spread with apple filling. Cover with remaining crumb mixture and press down lightly. Bake in 350 degree oven for 30 minutes. Cut into 25 squares.
