Here are 3 easy special desserts for your Valentine's party

GINGERALE BAKED APPLES:
4 baking apples
4 tablespoons golden raisins
4 teaspoons brown sugar
½ cup gingerale
Core apples without cutting through the bottom. Stand apples in a baking dish just large enough to hold them. Place 1 tablespoon raisins and I teaspoon brown sugar in centre of each apple. Pour in the gingerale. Bake at 350 degrees for 45 mins, basting frequently until apples are tender but not mushy. Serve warm or chilled.
BANANAS ROSANNA:
1 pint fresh strawberries
1 (6 ounce) can orange juice concentrate, thawed and undiluted
3 large ripe bananas, sliced
1 (8 ounce) carton fat-free Cool Whip
Wash, hull and cut up strawberries. Combine them in a blender with undiluted orange juice concentrate and blend until smooth. Alternate banana slices with strawberry –orange sauce. Top with Cool Whip. Serve chilled (8 servings).
PINEAPPLE COCONUT SHERBET:
2 (8 ounce) cans unsweetened crushed pineapple in own juice, drained
2 cups non-fat vanilla yogurt
½ cup unsweetened shredded coconut
2 tablespoons honey
Combine all ingredients and stir well. Pour into a shallow pan and freeze until partially set. Transfer to a bowl and beat 4 minutes. Pour into a container with cover and freeze until solid. Soften at room temperature for about 15 mins. before serving.
