Here are three easy appetizers for your Christmas Eve or New Year’s Eve party. Courtesy of the 4 Ingredient Cook Book by Linda Coffee and Emily Cale. HAPPY HOLIDAYS!

Salami roll-ups:

1 (8 oz) package cream cheese, softened

1 tsp prepared horseradish

12 ounces salami, sliced thinly

1/2 tsp salt (optional).

Combine cream cheese and horseradish with seasoning salt if desired. Spread 1 1/2 teaspoons of mixture on each salami slice. Roll up and secure with toothpicks.  Makes 36 appetizers.

Artichoke appetizer:

1 (8 1/2 ounce) can artichoke hearts, drained and chopped

6 eggs

1 cup grated Jack cheese with jalapenos

12 saltine crackers, crushed

Mix all ingredients and pour into 9 x 9 inch pan. Bake for 45 mins at 350 degrees. Cut into squares. Serve hot or cold.

Mini quiches:

1 can refrigerator butterfly biscuits

1 cup shredded Monterey Jack with pepper cheese

2 eggs

2 green onions with tops, finely chopped 

Separate rolls and divide each roll into three sections. Press dough sections in lightly greased mini-muffin cups stretching slightly to form shell. Mix cheese, eggs and onions and spoon mixture into shells. Bake for 15 minutes at 375 degrees or until firm.
