"It’s That Simple"

Have you heard the catchphrase "It's That Simple"? I picked up some great recipes from The 4 Ingredient Cookbook, by Linda Coffee, andEmily Cale. They are wonderfully simple to make. I hope you enjoy!
Baked Cod Vinaigrette
1 lb of cod filleted
4 tbsp fat-free viniagrette dressing
Paprika
1 tbsp minced chives
Arrange fillets in shallow baking dish and brush with salad dressing. Sprinkle with paprika and chives. Bake, uncovered at 450 degrees for 10 to 15 minutes or until fillets flake with fork. Serves 4.
Sesame Rice
2 cups cooked white rice
1/3 cup chopped green onions
1 tbsp sesame seeds
1/3 cup low-sodium soy sauce
While the rice is hot, combine all the ingredients and place into serving dish. Stir well. Serves 4.
Walnut Spice Cookies
1/4 cup sugar
1 tsp pumpkin pie spice seasoning, or cinnamon or ginger.
1 egg white, room temperature
1 cup walnuts
Mix sugar and seasoning. Beat egg white on high for 1 minute. Gradually add sugar mixture. Beat until stiff and fold in walnuts. Drop onto greased cookie sheet. Bake at 250 degrees for 35 to 40 mins.
Note: I tested this recipe, and it made 12 small delicious cookies.
